Interesting, I work for a large company and since it black history month they have made done the same thing for the lunches on Wednesday. Yes fortunate enough to work at place that still serves us lunches for free. They served that same meal except they called it country chicken. Plus they also post why the meal was chosen and its significance within the black culture. I love Wednesdays and me and my buddy eight ball always go to town.
As for ignorance. Every other month is Caucasian month. All celebrated holidays are Caucasian. Love your heritage, share your heritage, enjoy others heritage. Remember ignorance is not hereditary but a choice.

when we would celebrate black history month at the place i used to work at we would have a potluck the first friday of february. most of the people that brought something in were black. there was alot of cornbread, chicken, bbq ribs, hushpuppies, hot links etc...gotta say its some of the best tasting food ive ever had.
when we celebrated cinco de mayo we would do the same potluck thing and i would bring in tacos, tortas, enchiladas, burritos etc...cause thats what us mexicans eat.
if you walk into a soulfood restaurant you'll see things on the menu that you wont see elswhere..so i guess thats why they are considered "black" foods. (i dont know about that whole grape kool-aid thing though)
i dont see why you should get offended because they associate you with a particular kind of food. i certainly wouldnt get offended if someone made a comment about me eating tacos and bean burritos.

Heres a few items-

Tuna, Cheese & Noodle Casserole
2 cups cooked elbow macaroni
8 oz. Velveeta® - melted,
6 oz. can tuna in water - drained
10.75 oz. can condensed cream of mushroom soup
1 cup milk
2 eggs - beaten
1/3 cup chopped green olives
1 tsp. garlic salt
1/4 tsp. ground mustard seed
-Combine all ingredients in a greased, oven-proof casserole dish.
-Bake, covered, in 350 degree oven for 35 minutes.
-Uncover and bake additional 15 minutes.
Spam Jello
1 lg. box lemon or lime Jello
1 lg. can Spam or Treat
1 med. onion, chopped
1/2 c. boiling water
1/2 c. ice cold water
1/2 c. mayonnaise
1/2 c. sour cream
1/2 bell pepper, chopped
4 hard boiled eggs, chopped
1/4 c. relish (pickle, corn, etc.)
2 stalks celery, finely chopped
2 drops Tabasco
Bologna Salad
INGREDIENTS
* 4 eggs
* 1 (16 ounce) package bologna
* 1 (16 ounce) jar creamy salad dressing
* 1 cup sweet pickle relish
DIRECTIONS
1. Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
2. Grind the bologna and eggs in a meat grinder with a medium blade.
3. In a large bowl, mix the bologna mixture with desired amount of creamy salad dressing and desired amount of sweet pickle relish. Refrigerate 2 to 3 hours, or until chilled.
Dissolve Jello in boiling water. Add cold water, mayonnaise and sour cream to Jello. Chop Spam; add to Jello with remaining ingredients. Chill until firm. Makes 6 to 8 servings. This recipe is excellent on a hot day.
